SYLVAIN PATAILLE, "THE YOUNG WOLF OF WINE GROWING"
Sylvain Patailleis a winemaker with an unconventional career path. Born in Burgundy, though not from a winemaking family, he has always been drawn to the vine. After studying oenology in Bordeaux, he was hired by a large oenology laboratory in Beaune. Alongside this work, starting in 1989, he leased a hectare of vines toMarsannayand decided to devote himself entirely to its operation in 2009.
Deeply committed to environmental issues, he strives to farm organically and cultivates in the most sustainable way possible.great respect for nature and biodiversityHis uncompromising stance paid off, and he experienced significant expansion of his land in 2002 and 2003. He was described by his peers as "young wolf of wine culture"He surprises in his work by constantly experimenting with new techniques."
The terroir
THE VILLAGE OF MARSANNAY
It is north of thefamous Côte de NuitsThe village ofMarsannayVines have been growing there since the 7th century, on soil composed of clay, limestone, and marl, forming a veritable geological mosaic. Three grape varieties are cultivated on its land:Pinot Noir(90%) in red and two whites which are thealigot(75%) and thechardonnay(25%) which express themselves perfectly on soils like those of the Côte de Nuits.

RESPECT FOR THE FRUIT AND THE PLANT
Sylvain PatailleSylvain Pataille is committed to allowing the vine and fruit to fully express themselves and to minimizing intervention during the winemaking process. This involves preserving the key characteristics of the grape varieties through hand-harvesting and gentle vinification. Vinification is carried out using long, very gentle vertical pressings with minimal intervention. The wines are aged in oak barrels (30% new) for 15 to 18 months. Sylvain Pataille's wines express the winemaker's passion. Like nature itself, he strives for constant renewal, aiming to translate the full expression of his terroir into his 27 different cuvées.
