Description

    Bruno Paillard is an independent house founded in 1981, which in a few decades has become an absolute reference thanks to a quest for extreme purity, a deliberately refined style and a deep commitment to quality standards.

    Larmandier-Bernier , a family estate established in Vertus since the beginning of the 19th century, is part of the elite of artisanal Champagne: early organic farming, precision viticulture, historic plots and unadorned expression of the chalk.

    Ruinart , established in 1729, is the oldest Champagne house. Its history is inextricably linked to Chardonnay: elegance, aromatic finesse, and pioneering work in the chalk cellars of Reims give it an inimitable signature.

    Notes and pairings

    Notes and pairings

    Tasting notes

    The Bruno Paillard Blanc de Blancs Grand Cru reveals a very pure nose of citrus, white flower and wet chalk; the palate is straight, saline, carried by a fine effervescence and a remarkable length.

    The Larmandier-Bernier Terre de Vertus 2017 expresses itself with intensity: candied lemon, orange zest, fresh almond, stony notes, vibrant mouthfeel and chalky length of great precision.

    The Ruinart Blanc de Blancs charms with its aromas of pear, bergamot and linden; the palate is ample, caressing, dynamic, supported by a delicately lemony finish.

    Food & wine pairings

    These three champagnes pair perfectly with dishes of great finesse: scallop carpaccio, sea bass tartare, sushi and sashimi, poultry with citrus fruits, or mature hard cheeses.

    Producer

    Producer

    Bruno Paillard sources his Blancs de Blancs from the Grand Cru classified terroirs of the Côte des Blancs, dominated by pure chalk.

    Larmandier-Bernier cultivates historic plots in Vertus, a Premier Cru terroir renowned for its deeply draining chalky soil and old Chardonnay vines.

    Ruinart values supplies coming mainly from the Côte des Blancs and the Montagne de Reims Est, areas where Chardonnay expresses tension, finesse and aromatic brightness.

    Owner and history

    The Maison Bruno Paillard, still family-owned, is run by Alice Paillard who perpetuates the founding requirement of purity and elegance.

    The Larmandier-Bernier estate has been in the hands of the Larmandier family for eight generations, a symbol of consistency, know-how and environmental commitment.

    Maison Ruinart, owned by the LVMH group, continues to shine with its unique heritage and its style resolutely focused on the finesse of Chardonnay, making its Blanc de Blancs a global benchmark.

    Vinification and aging

    The three houses favour a high-precision approach: gentle pressing, fermentation in temperature-controlled tanks or barrels depending on the vintage, prolonged aging on lees and controlled dosage.

    Bruno Paillard excels in the art of blending with a significant proportion of reserve wines;

    Larmandier-Bernier vinifies on a plot-by-plot basis, often using indigenous yeasts, in order to respect the identity of Vertus;

    Ruinart seeks excellence in the balance between energy and roundness through careful aging in chalky cellars.

    The team's opinion

    Three masterful visions of Champagne Chardonnay, blending tension, elegance and mineral energy, for a case that reveals all the nobility of the Blanc de Blancs of Champagne.
