The harvest is carried out by hand, with a rigorous double sorting process to select only the best grapes. Long macerations, lasting three to four weeks, ensure optimal aroma concentration.
Livestock farmingThis wine is made with a thoughtful use of wood. The Grenache grapes are aged primarily in large oak casks for slow micro-oxygenation, while the Syrah and Mourvèdre grapes benefit from barrels for added finesse. A small proportion of new oak is used, just enough to bring complexity without masking the wine's identity.
