    Vinification and aging

    Winemaking at Château Haut-Bailly is made with great care. The grapes are harvested by hand, then sorted to retain only the very best. Fermentation, carried out in temperature-controlled tanks, allows for a gentle extraction of tannins. After malolactic fermentation, the wine is aged in oak barrels, some of which are new, for 15 to 18 months. This meticulous aging process gives the wine its structure, complexity, and aging potential.
