Vinification and aging

Winemaking at Château Palmer is a meticulous process that begins with the hand-harvesting of carefully selected grapes. After gentle destemming, the berries are placed in vats for temperature-controlled alcoholic fermentation, allowing for optimal extraction of tannins and aromas. The wine is then aged in oak barrels, some of which are new, for approximately 18 months. This barrel aging, combined with regular lees stirring, refines the texture and develops aromatic complexity. Each step is carried out with particular care, respecting the wine's unique character.
