Domaine de Baronarques is located in Languedoc, near Limoux, in the commune of Saint-Polycarpe. Domaine The estate comprises 110 hectares in a single block, 43 of which are planted with vines. Located 400 km from the Atlantic Ocean and 100 km from the Mediterranean Sea, the vineyard benefits from both climatic influences, guaranteeing optimal sunshine and balanced rainfall. Thanks to the proximity of the Pyrenees Mountains, the altitude of the plots, between 250 and 350 meters, moderates the summer heat. The soil is primarily clay-limestone, with the exception of a few plots that are more gravelly and sandy.

    Owner and history

Domaine de Baronarques is a very old property, which already existed in the 17th century under the name of Domaine Lambert. At that time, the Domaine belonged to the Abbey of Saint-Polycarpe, a village located near Limoux in the Aude region. After having had several successive owners, the Domaine It was sold in 1875 to Michel Tisseyre. The Tisseyre family devoted themselves to expanding the vineyard – 48 hectares in 1910 – and built a charming house with a terrace and garden between 1890 and 1900. In 1998, Mr. Chéreau, a lawyer in Marseille and heir of the Domaine, sells it to la baronne Philippine de Rothschild and her two sons. All three entrusted its management to the family company Baron Philippe de Rothschild. Domaine was then in poor condition and required a major renovation of the vineyard and technical facilities. This would last 5 years. In 2003, the Domaine de Baronarques benefited from an exceptional set of circumstances: on the one hand, the wine proved to be of very high quality; on the other hand, the Domaine receives the AOC Limoux red appellation, newly created by the National Institute of Appellations of Origin (INAO). This great wine can then worthily take its place among the other châteaux of the family, including the illustrious Château Mouton Rothschild. In 2014, Camille Sereys de Rothschild also became a co-owner alongside her brothers Philippe Sereys de Rothschild and Julien de Beaumarchais de Rothschild.

    Vinification and aging

The sorting takes place above the winemaking vat, and thus uses gravity in order to best respect the integrity of the fruit.

After delicate destemming and light crushing, the grapes are placed to ferment in stainless steel tanks.

Alcoholic fermentation lasts approximately 8 days at a maximum temperature of 30°C. It is followed by maceration for two to four weeks, depending on the vats and grape varieties.

After malolactic fermentation, the Grand Vin rouge is aged for 12 months in barrels, either new (25 to 50% depending on the vintage), or one to three years old.

For La Capitelle de Baronarques, the Second Vin red of the Domaine, Aging in barrels is limited to 6 months.
