    Vinification and aging

    Winemaking at Domaine L'Aventure is a meticulous process that blends tradition and innovation. The grapes are hand-harvested and carefully sorted to retain only the finest fruit. After gentle crushing, fermentation takes place in stainless steel tanks, allowing for optimal extraction of aromas and tannins. Aging occurs in oak barrels, some of which are new, to enrich the wine with subtle woody aromas while preserving the purity of the fruit. This winemaking process is designed to best express the terroir of Paso Robles, creating wines of great complexity.
