    Colore 2021 presents a deep, brilliant, intense ruby ​​robe. The nose is very expressive, revealing aromas of black cherry, violet, Mediterranean herbs, and incense. On the palate, the attack is ample and velvety, supported by silky tannins and a refined structure. The balance between concentration and freshness is remarkable. The finish lingers long on notes of black fruit and spice, leaving a vibrant and persistent sensation.

    Colore grapes come from very old vines located in the highlands of Lamole, Vincigliata, and Olmo, at altitudes of over 400 meters. These plots are cultivated on schist and sandy soils, offering excellent drainage and minerality. Thanks to the altitude, the temperature variations ensure slow ripening, ideal for preserving freshness and aromatic finesse. Organic farming allows the wines to express the true character of these exceptional terroirs.

    Bibi Graetz, an artist turned winemaker out of passion, embodies the renaissance of a vibrant and authentic Tuscan style. He built his estate on an intuition and creative freedom rarely found in the world of wine. His commitment to old indigenous grape varieties, organic farming, and the revitalization of forgotten plots sets him apart. With Colore, he has created a cult classic, born from an artistic vision as much as a winemaking one.

    Vinification and aging

    At Bibi Graetz, winemaking is artisanal: spontaneous fermentation, long macerations in small open vats, without the addition of yeasts. Each plot is vinified separately to extract its purest expression.
    Colore 2021 is then aged for 20 months in new French oak barrels, without filtration. This patient aging reveals the wine's full depth without masking the fruit's freshness. This process imparts a silky texture and beautiful complexity.
