The vineyard of Château The Quarts estate spans carefully selected plots of land, benefiting from optimal sun exposure. The clay-limestone soils, rich in minerals, impart a unique structure and complexity to the grapes. The vines, some several decades old, are cultivated with meticulous care, incorporating sustainable viticultural practices to preserve biodiversity and soil health. Each bunch is harvested by hand, ensuring a rigorous selection of the finest fruit, essential for crafting exceptional wines.

Owner and history

For 10 years, Olivier Merlin has brought back to the forefront this historic terroir of the appellation which had remained forgotten for more than a century. In 2011, upon learning of the sale of this beautiful property in Mâcon, Olivier proposed to Dominique LAFON that they acquire it jointly. They became owners in 2012, producing their first vintage together.

Vinification and aging

Winemaking at Château The production of des Quarts is a delicate process, blending tradition and innovation. After hand-harvesting, the grapes are gently pressed to extract the juice. Fermentation takes place in stainless steel tanks or oak barrels, depending on the vintage, preserving the pure expression of the Chardonnay. Aging, lasting several months, occurs on fine lees, adding complexity and texture to the wine. This meticulous attention to detail at every stage, from vine to glass, results in elegant and refined wines that faithfully reflect their terroir.
