    Owner and history

    The white wine from Château Simone comes from a vineyard located on north-facing slopes with limestone scree soils. Although the vines are on average 50 years old, some plots are over a century old!

    Vinification and aging

    - Hand-harvested at full ripeness
    - Light tread
    - Draining and pressing on vertical hydraulic presses
    - Fermentation with natural yeasts
    - Aged for 18 months, with 6 months on fine lees in small casks followed by 12 months in barrels
