    Notes and pairings

    Tasting notes

The 2021 Petite Sibérie boasts a deep, purple-tinged robe. The nose is captivating, blending stewed black fruits with oriental spices, along with a touch of balsamic and elegant oak. On the palate, the wine is dense, structured by silky tannins and remarkable aromatic richness. The long, warm finish leaves a lingering impression of licorice, cocoa, and garrigue. An exceptional wine to be savored slowly.

    Food & wine pairings

This wine pairs perfectly with game in sauce, roast lamb or hare à la royale.

    Producer

    Producer

La Petite Sibérie comes from a single 2.38-hectare plot, representing approximately half of the production. This cuvée is made from old vines (between 50 and 100 years old) facing south and east-west. The soil is clay-limestone, situated on a flow of reddish-black schist and mica-schist, with an exceptional iron content.

    Owner and history

Hervé Bizeul, a former sommelier and food journalist, founded Domaine du Clos des Fées in 1997 with his wife, Claudine. Driven by a radical vision of precision viticulture, he transformed a few isolated plots into an internationally renowned estate. In his constant pursuit of excellence, he is personally involved in every step, from working the soil to aging the wine. His style is characterized by the search for pure emotion in the glass. La Petite Sibérie is the culmination of this philosophy: a rare wine, born from an exceptional terroir, that embodies the commitment, exacting standards, and passion of its creators.

    Vinification and aging

The vines destined for La Petite Sibérie are planted on a unique plot of black schist, swept by cold north winds, which explains its evocative name. These old Syrah vines, over 70 years old, plunge their roots deep into poor, well-drained soil, resulting in very low yields but exceptional concentration. The dry, sunny climate of Roussillon, combined with sustainable farming practices and meticulous pruning, allows for the harvest of perfectly ripe grapes, capable of producing wines of remarkable intensity and longevity.
