This champagne has undergone more than twice the appellation's required maturation time in the cellars and under cork. Its dosage is low, at 4 grams per liter.

The Côte aux Enfants Grand Cru Aÿ 2013 comes exclusively from vines located in Aÿ, a historic Grand Cru terroir in Champagne. This vineyard, benefiting from ideal exposure and chalky soil, imparts exceptional richness to the grapes. The Bollinger house practices sustainable viticulture, prioritizing environmentally friendly methods to preserve the authenticity of the terroir. Thanks to a favorable climate and meticulous harvesting, the Pinot Noir reaches perfect ripeness, giving this cuvée a powerful structure and great aromatic complexity.

Vinification and aging

Bollinger prides itself on its rigorous winemaking methods, guaranteeing the quality and elegance of each vintage. Fermentation takes place in oak barrels, imparting a subtle woody dimension and added complexity. Extended aging on the lees refines the texture and enriches the aromatic profile, giving this champagne remarkable depth and longevity.
