Currently managed by the Bollinger family, the house has maintained its independence and family spirit. President Jérôme de Launoit embodies the house's passion and commitment to quality. Proud of its heritage, the Bollinger family continues to invest in the vineyards and facilities, while remaining dedicated to respecting the traditions that have made the house famous. Their vision is to produce champagnes that tell the story of the terroir and the house, while adapting to contemporary demands.

Vinification and aging

Winemaking at Bollinger is a true alchemy. The carefully selected grapes are gently pressed to extract the must. Fermentation takes place in oak barrels, allowing for micro-oxygenation that enriches the wine with complex flavors. Each cru is vinified separately before being blended to create the Special Cuvée, a process that requires patience and expertise. Aging on the lees, which lasts for several years, gives the champagne its creamy texture and aromatic depth. The dosage is applied sparingly, preserving the wine's integrity while adding a touch of sweetness.
