    Vinification and aging

    Winemaking at Champagne Delamotte is carried out with respect for tradition. The grapes, carefully harvested by hand, are slowly pressed to extract the delicate juice. Alcoholic fermentation takes place in stainless steel tanks, preserving the freshness and aromas of the Chardonnay. The wine is then aged on its lees for several months, which gives it aromatic complexity and a refined texture. The secondary fermentation takes place in the bottle, followed by aging on the lees, allowing the wine to develop its subtle aromas before disgorgement and release.
