    Vinification and aging

    Winemaking at Château de La Tour is a meticulous process that respects Burgundian traditions. The carefully selected grapes are destemmed before being fermented in wooden vats. Fermentation takes place at a controlled temperature, allowing for a gentle extraction of tannins and aromas. Aging occurs in oak barrels, some of which are new, for 12 to 18 months. This aging process refines the aromas and gives the wine an elegant structure, while subtly integrating the oak notes. Every step is carefully considered to reveal the very best of this grand cru.
