    Vinification and aging

    Winemaking at Château Durfort-Vivens is carried out with care and precision. The grapes are harvested by hand, allowing for rigorous selection. After delicate destemming, alcoholic fermentation takes place in temperature-controlled stainless steel tanks, promoting the extraction of aromas. The wine is then aged in oak barrels, some of which are new, for 12 to 18 months. This aging process imparts complexity and finesse to the wine, while respecting the character of the terroir.
