    Vinification and aging

    The winemaking process for Château Olivier 2016 is the result of traditional expertise combined with modern techniques. After a carefully selected, hand-harvested grape harvest, the grapes are destemmed and crushed. Fermentation takes place in temperature-controlled stainless steel tanks, preserving the aromas and freshness of the fruit. The wine is then aged in oak barrels, some of which are renewed annually, for a period of 12 to 16 months. This process brings complexity and elegance to the wine, while respecting the character of the terroir.
