    Vinification and aging

    Winemaking at Château Trotanoy is a meticulous process, where each step is carefully considered to preserve the integrity of the grapes. After a manual harvest, the grapes are destemmed before being placed in vats for controlled fermentation. This fermentation lasts approximately three weeks, allowing for a gentle extraction of tannins. The wine is then aged in oak barrels, some of which are new, to impart a subtle oak influence while respecting the fruit. This process reveals the wine's complexity while ensuring its balance and longevity.
