    The 2016 Échezeaux Du Dessus Grand Cru pairs perfectly with a porcini mushroom risotto, braised lamb, or truffle brie. Serve it between 16 and 18°C, opening it a few hours before tasting, or even decanting it to fully reveal its aromas.

    Owner and history

    The Échezeaux du Dessus vineyards are situated on a unique terroir, composed of clay-limestone soils, which give the wine its complex and powerful character. This terroir is part of the historic Échezeaux parcels, alongside Champs Traversins and Poulaillères. Carefully cultivated, the vines benefit from optimal sunshine, guaranteeing perfect grape ripeness and an authentic expression of the terroir.

    Vinification and aging

    The grapes are harvested by hand and then carefully sorted. A pre-fermentation cold maceration of 4 to 6 days is carried out to extract the phenolic compounds. The grapes are partially destemmed, with 30% whole cluster fermentation, followed by a 15-day maceration. Fermentation is carried out with indigenous yeasts, before the free-run juice and press juice are separated and aged separately. The wine is then aged for 17 months in French oak barrels (60% new), followed by 2 months of rest in tanks to refine its character.
