The Domaine Faiveley vineyard stretches across clay-limestone soils, typical of Burgundy, which impart great complexity to the wines. The vines, some several decades old, are cultivated with care, promoting biodiversity and respecting natural cycles. The region's temperate climate, with its warm summers and cold winters, allows for optimal grape ripening, giving the wines a beautiful concentration of flavors. Each plot is meticulously tended, ensuring a true expression of its terroir.

    Owner and history

Domaine Faiveley is now run by the eighth generation of the family, who continue to embody the spirit of innovation and respect for tradition. The current owners, Erwan and his brother, are committed to preserving the family heritage while exploring new techniques to improve the quality of the wines. Their passion for the Burgundy terroir is reflected in every bottle, a testament to their devotion to the art of winemaking. They are also environmentally conscious, integrating sustainable practices into the management of the estate.

    Vinification and aging

Winemaking at Domaine Faiveley is a meticulous art. The grapes are harvested by hand, then destemmed before being gently crushed. Fermentation takes place in wooden vats, allowing for a delicate extraction of tannins. Aging occurs in oak barrels, some of which are new, to enrich the wine without masking its fruit. This process lasts approximately 12 to 18 months, depending on the vintage, and is followed by bottle aging, which allows the wine to harmonize before being released to wine lovers. Each step is carefully considered to enhance the identity of the terroir and the grape variety.
