The family is committed to producing wines that reflect their terroir, while respecting the environment. Their vision is to continue writing the estate's story, highlighting the authenticity and excellence of each vintage.

Vinification and aging

Winemaking at Domaine Faiveley is carried out in accordance with Burgundian traditions. After a carefully selected, hand-harvested grape harvest, the grapes are gently pressed to preserve their integrity. Alcoholic fermentation takes place in stainless steel tanks, allowing for optimal temperature control. The wine is then aged in oak barrels, some of which are new, to impart a subtle touch of wood without masking the fruit. This aging process, which lasts several months, allows the wine to develop its complexity while harmoniously integrating its aromas. Each step is carefully considered to enhance the terroir and the grape variety, thus guaranteeing a wine of exceptional quality.
