    Vinification and aging

    The winemaking process for the 2022 Volnay 1er Cru Fremiets follows Burgundian tradition. After a carefully selected, hand-harvested grape, the wine is destemmed and fermented in stainless steel tanks, allowing for a gentle extraction of aromas and tannins. The wine is then aged in oak barrels, some of which are new, for 12 to 15 months. This crucial step adds complexity and depth to the wine while preserving the purity of the fruit. Barrel aging is followed by light fining and filtration before bottling, ensuring a wine that truly reflects its terroir.
