Vinification and aging

Winemaking at Domaine Faiveley prioritizes a respectful approach to the fruit, with controlled fermentations and aging adapted to each terroir. The goal is to preserve purity and balance.
For the Puligny-Montrachet 1er Cru La Garenne 2023, alcoholic fermentation takes place in barrels, followed by aging for 12 to 18 months in oak barrels, a limited proportion of which are new. This aging process brings subtle complexity without masking the mineral expression of the terroir.
