The Lavaux Saint-Jacques vineyards stretch across the steep slopes of Gevrey-Chambertin, where the soils, a blend of limestone and clay, impart exceptional depth and complexity to the Pinot Noir. Thanks to a unique microclimate, this terroir offers ideal conditions for the slow and even ripening of the grapes, resulting in wines of great finesse and remarkable aromatic richness.

Vinification and aging

At Domaine Faiveley, winemaking is based on a meticulous approach that respects the intrinsic qualities of the grapes. For this Premier Cru Lavaux Saint-Jacques, fermentation takes place in tanks to ensure a delicate extraction of aromas and tannins. The wine is then aged for 16 months in French oak barrels, carefully selected to enhance its aromatic complexity.
