    Notes and pairings

    Tasting notes

Baudouin 2022 displays a pale yellow color with golden highlights. The nose is subtle, marked by aromas of white flowers, linden blossom, and fresh pear, with a chalky touch. On the palate, the wine is precise and taut, driven by beautiful acidity and a crisp minerality. The finish is persistent and saline, leaving an impression of remarkable purity and harmony.

    Food & wine pairings

This wine pairs perfectly with seafood, roasted sea bass or fresh goat cheese with herbs.

The grapes for the Baudouin cuvée come from selected plots on flinty clay and tuffeau soils, typical of Montlouis-sur-Loire. The vines draw all their complexity and minerality from these soils. The vineyard, cultivated biodynamically, faithfully expresses the characteristics of the Loire Valley terroir, thanks to rigorous work that respects both the vines and the soil.

    Owner and history

François Chidaine is a demanding and passionate winemaker, a pioneer of biodynamic viticulture in the Loire Valley. After taking over part of the family estate in the 1990s, he transformed his vineyards into living laboratories where the best of Chenin Blanc is expressed. His commitment to sustainable agriculture, his respect for living organisms, and his constant pursuit of excellence have raised his estate to one of the most respected in France.

    Vinification and aging

At the estate, winemaking relies on natural methods, without unnecessary additives. Fermentation is carried out with indigenous yeasts and takes place slowly in large oak casks.
The Baudouin 2022 vintage is then aged on fine lees for several months in old wood, which gives it texture and depth while retaining the tension characteristic of Chenin.
