    Owner and history

    The Geantet-Pansiot vineyard is planted on clay-limestone soils typical of the Côte de Nuits, providing the Pinot Noir vines with a rich and favorable terroir. The old, well-rooted vines benefit from ideal sun exposure, allowing for optimal ripening of the grapes and producing concentrated and refined wines.

    Vinification and aging

    Domaine Geantet-Pansiot places particular importance on meticulous winemaking that respects the expression of the terroir. The grapes are harvested by hand to ensure only the finest bunches are selected. Fermentation is carried out traditionally with indigenous yeasts to preserve the aromatic authenticity of the Pinot Noir. The 2011 Combe au Moine vintage is aged in oak barrels, some of which are new, for approximately 18 months. This careful aging process imparts elegant oak notes without overpowering the fruit. The result is a balanced wine, both powerful and refined, capable of aging in the cellar and improving with age.
