The 2023 Volnay 1er Cru Caillerets displays a brilliant ruby ​​color with garnet highlights. The nose is complex and delicate, blending aromas of peony, morello cherry, and a subtle chalky note. On the palate, the attack is smooth, supported by an elegant and refined tannic structure. The vines are cultivated with care using sustainable practices, allowing the pure identity of this exceptional terroir to be expressed. The ideally situated plot yields concentrated, perfectly ripe grapes, resulting in a wine of great elegance, true to the expression of Pinot Noir on stony soil.

Owner and history

Henri Boillot, a passionate and perfectionist winemaker, represents the fifth generation at the helm of the family estate. He has elevated the property to the ranks of Burgundy's most respected estates thanks to a constant pursuit of quality and an intimate knowledge of each vineyard site. His commitment is based on precise, minimal-intervention winemaking and attentive viticulture, expressing the soul of his terroirs with purity and intensity, in both red and white wines.

Vinification and aging

At Domaine Henri Boillot, winemaking respects the integrity of the fruit: hand-harvested grapes, gentle maceration, and indigenous yeasts ensure a natural expression of the terroir. The wine is aged in French oak barrels (a moderate proportion of which are new) for approximately 18 months.
The Volnay 1er Cru Caillerets 2023 vintage benefits from aging on fine lees, without fining or filtration, in order to preserve all its finesse, velvety texture and slender structure.
