    Owner and history

    This cuvée is made from a single Syrah grape variety, approximately thirty years old. The vines are planted on granitic soil at an altitude of 350 meters, hence the name of the cuvée.

    Vinification and aging

    - Hand-harvested plot by plot
    - 100% destemming
    - Traditional winemaking in raw concrete vats
    - Maceration for 28 to 32 days with punch-downs and pressing
    - Aged for 12 months in demi-muids (30%) and the rest in raw concrete vats (70%)
