This wine will perfectly complement a rack of lamb in a herb crust, duck breast with figs, or a selection of mature cheeses. It is recommended to serve it at 16-17°C, after decanting for at least an hour to reveal its full complexity.

Owner and history

The Premier Cru Les Chaponnières is one of Pommard's finest terroirs, situated on iron-rich clay-limestone soil, characteristic of the appellation. This terroir imparts a great tannic structure to the wines, ideal for harmonious aging. Pierre Girardin's vineyard is in full transition to organic viticulture, with respectful practices that promote the vine's natural balance. The optimal exposure of the plots allows for slow and even ripening of the grapes, giving the wines depth and elegance.

Vinification and aging

The grapes are harvested by hand, allowing for rigorous selection of the finest bunches. After meticulous sorting, the grapes are vinified in open vats, where fermentation occurs with indigenous yeasts, thus preserving the full authenticity of the terroir. Pressing is gentle and slow, in order to extract the finest tannins and ensure a beautiful structure in the wine. Aging takes place in French oak barrels, carefully selected to limit the influence of the wood and promote perfect harmony between fruit and structure. The aging period varies between 12 and 18 months, depending on the characteristics of the vintage. Finally, the wine is bottled unfiltered, preserving all its purity and aging potential.
