This Premier Cru comes from 2.24 hectares spread across 3 climats: Pied d'Aloup (east-facing), Côte de Bréchain (facing west, vines planted in 1936) and Chapelot (South-facing). Aromas of poached pear, citrus, and shellfish are present. On the palate, it has a lovely volume that finishes with a dry finish. This vineyard produces more muscular and structured wines compared to other vineyards on the right bank of Chablis. It is a surprisingly powerful wine.

The Chablis Premier Cru Montée de Tonnerre comes from an exceptional terroir, located on the right bank of the Serein River, extending from the renowned Grand Cru vineyards of Les Clos and Blanchot. Spanning 43 hectares, this appellation benefits from a southeast to west exposure, ideal for optimal Chardonnay ripening. Domaine William Fèvre cultivates 2.24 hectares within this appellation, in the vineyard plots of Pied d'Aloue, Chapelot, and Côte de Bréchain. The soil here is primarily composed of Kimmeridgian marl and clayey limestone, a geological formation dating back to the Upper Jurassic period. Rich in marine fossils, particularly Exogyra virgula oysters, this terroir imparts intense minerality and a unique character to the wines. The shallow, slightly stony plots allow the roots to draw water from deep within, bringing to the vines all the richness of this singular soil. The sustainable farming practices employed at the estate ensure respectful viticulture, limiting interventions and promoting the pure expression of the terroir. Thanks to this meticulous care, the wines of Domaine William Fèvre display a strong identity, marked by the freshness and tension characteristic of great Chablis.

Vinification and aging

Winemaking at Domaine William Fèvre is based on a respectful approach to the grapes, with manual harvesting and gentle pneumatic pressing. The juices are lightly settled to retain the fine lees, essential for natural alcoholic and malolactic fermentations.
For the 2023 Chablis Premier Cru Montée de Tonnerre, fermentation takes place in French oak barrels (averaging six years old) for 40 to 50% of the blend, while the remainder is vinified in stainless steel tanks. Aging lasts 13 to 14 months, including 5 to 6 months on fine lees. This method imparts a beautiful complexity to the wine while preserving its mineral tension. Thanks to this balance between subtle oak and pure fruit, this cuvée gains depth, offering a long and elegant finish.
