    This wine pairs perfectly with oysters, scallop tartare, or a fillet of sole with beurre blanc sauce. Best enjoyed between 10 and 12°C.

    Owner and history

    The Montmains vineyard is situated on the left bank of the Serein River, benefiting from an ideal exposure that promotes the gradual ripening of the grapes. The Kimmeridgian clay-limestone soil, characterized by the presence of ancient fossilized oyster shells, imparts intense minerality and vibrant freshness to the wines. Cultivated biodynamically, the vineyard is meticulously tended to preserve the pure expression of the terroir and produce wines of great finesse.

    Vinification and aging

    At Joseph Drouhin, winemaking adheres to a principle of minimal intervention. The grapes are harvested by hand and fermented in stainless steel tanks and oak barrels to preserve the fruit's authenticity. Aging on fine lees for 12 to 15 months, partly in barrels, adds complexity and texture to the wine, while maintaining its brightness and mineral tension.
