Tasting notes

Enjoy with braised beef, rabbit stew or a beautiful veal chop with chanterelles. Feel free to open the bottle at least an hour before tasting and serve it at around 15°C.

Owner and history

Mr. Roche planted these Carignan vines in 1892. The vines have survived the years and produce an ethereal wine. The vines are cultivated using horses to preserve these old Carignan vines. The vineyard is farmed organically and biodynamically.

Vinification and aging

- Hand-harvested grapes
- Vinification in truncated conical wooden vats and terracotta amphorae (35%) with indigenous yeasts
- Aged for 12 months in barrels and amphorae to bring out the freshness of the vintage.
