    We love to enjoy this vintage with a delicious prune tagine, a rack of lamb with butternut squash purée, or a fine pork chop. Serve at around 16°C now or after a few years of aging.

    Owner and history

    The soils are similar to those of Châteauneuf-du-Pape, composed of rolled pebbles and red clay. The vineyard is cultivated using organic farming methods.

    Vinification and aging

    - Hand-harvested grapes with sorting
    - Traditional winemaking 80%: complete destemming followed by fermentation in concrete vats (27 days)
    - Carbonic maceration 20%: whole-cluster fermentation under carbon dioxide protection (14 days)
    - Aged for 24 months in concrete vats (60%) and in large oak casks (40%)
