Located in the Var hinterland, in the heart of the Provençal hills, Château Peyrassol is a historic wine estate , founded in the 13th century by the Knights Templar. Today, it extends across high -altitude vineyards cultivated organically , combining respect for nature with meticulous winemaking expertise. Tasting notes

The XIIIE Rosé 2024 boasts a pale hue reminiscent of a rose petal. The nose, very open, reveals an intense bouquet of fresh flowers and red berries. On the palate, the attack is soft, velvety, and immediately enveloping. The whole lingers elegantly towards a mouthwatering finish, carried by a delicate salinity. The harmony between freshness, finesse, and aromatic expression offers a refined and thirst-quenching vision of rosé from Provence.

The vines of Château Peyrassol flourish at an altitude of 330 meters on clay and limestone soils typical of the inland valleys of the Var region. The plots selected for the XIIIE cuvée benefit from northern exposures, promoting freshness and slow ripening of the grapes. This well-drained terroir, combined with demanding organic viticulture, yields remarkably balanced berries, rich in aromas. The estate's diverse vineyard plots, along with selective harvesting, provide the perfect foundation to express the full Provençal character of this cuvée, which is at once elegant, expressive, and true to its origins.

Owner and history

Since 2001, Château Peyrassol has belonged to Philippe Austruy, an entrepreneur with a passion for great wine-growing regions. He breathed new life into the estate by transitioning to organic viticulture and renovating the vineyard and facilities. A visionary, he has successfully combined authenticity and modernity, as evidenced by the XIIIE cuvée, created to celebrate the 20th anniversary of the acquisition. The bottle, designed by Pierre Yovanovitch, perfectly reflects this philosophy: respect for heritage, deep roots in the terroir, and a contemporary perspective on the great rosé wines of Provence.

Vinification and aging

The winemaking process at Château Peyrassol respects the natural cycles and the ripeness of each plot. For the XIIIE 2024 vintage, the harvest took place between August 28th and September 11th, guided by the lunar cycles. The grapes are gently pressed using pneumatic presses, before fermentation in temperature-controlled stainless steel tanks.
The wine is then aged for a few months on its fine lees, also in stainless steel tanks, to best preserve its aromatic freshness and velvety texture. This meticulous approach guarantees a rosé with a pure, vibrant, and thirst-quenching expression.
