      Owner and history

      La Sabarotte is one of the most prestigious terroirs in Cornas. Here, the vines, averaging 70 years old, are deeply rooted in granite soil, giving the wine remarkable depth and complexity.

      Vinification and aging

      - Harvesting and vineyard work done by hand
      - Traditional winemaking in stainless steel tanks with malolactic fermentation in barrels
      - Aged for 18 months, 70% in new oak barrels and 30% in barrels that have previously held wine
