Vinification and aging

Winemaking at Domaine Faiveley is a meticulously mastered art. The hand-harvested grapes are rigorously sorted before being destemmed. Fermentation takes place in wooden vats, promoting a gentle extraction of tannins. Aging, lasting 12 to 18 months, occurs in oak barrels, some of which are new. This allows for the subtle integration of oak aromas while preserving the purity of the fruit. Each step is carefully considered to reveal the richness of the terroir, resulting in wines of great depth.
