    Vinification and aging

    The vinification of the 2020 Hermitage is carried out with meticulous care. The hand-harvested grapes are destemmed before being fermented in stainless steel tanks, allowing for a gentle extraction of tannins. After fermentation, the wine is aged in oak barrels, some of which are new, for a period that varies to impart complexity and roundness.
