Winemaking and aging
The secret of exceptional wines
The grapes are harvested by hand and sorted directly in the vineyard by the pickers, and undergo a double sorting before destemming. They are then placed in open stainless steel or wooden vats where temperatures are controlled by thermoregulation. Pressing is carried out gently using a pneumatic press.Domaine LamarcheThis method promotes cold maceration and extended fermentation. The wines are aged for an average of 14 to 20 months in French oak barrels. Depending on the vintage and appellation, 30 to 50% of the barrels are new.
For all red wines, the suggestion is generally to enjoy them at a serving temperature between 15 and 16°C. The wines' profile is essentially focused on elegance and finesse, reflecting the meticulous aging and winemaking process carried out by theLamarche family.
