Tasting notes

Château d'Yquem 2011 is a magnificent Sauternes best enjoyed at a temperature of around 10°C. Consider opening it 1 or 2 hours in advance. To allow the excellence to express itself, Pierre Lurton advises tasting this Château Yquem with a crepe Suzette, very lightly sweetened with orange slices and a touch of Grand Marnier. Others pair it with candied orange peel or rhubarb pie. If you prefer to accompany it with savory dishes, here is a menu suggestion: - Appetizer: Fresh figs with goat cheese and honey - Starter: Porcini mushroom tartlet with foie gras - Dishes: Salmon steaks with leek fondue - Cheese: Gorgonzola and walnuts

Owner and history

The Yquem vineyard covers 113 hectares (only 102 are cultivated). The vines are thus planted on a wide variety of soils typical of Sauternes (clay-sand and clay-limestone). One of the great strengths of this estate is that the vineyard is constantly being renewed. Indeed, every year, the oldest vines are uprooted on 2 to 3 hectares. Before being replanted with new vines, these plots are left fallow for at least a year. Furthermore, these young vines are given time (approximately 5 years) to reach a certain level of maturity before their first harvest. Finally, the secret of Yquem lies in its microclimate, conducive to botrytis, the noble rot that gives the unique aromas of sweet wines.

Vinification and aging

- Hand-harvested grapes in crates
- Method of successive "sorting": 5 to 6 passes spaced one week apart. This method increases the quantity of berries affected by the "noble rot" known as Botrytis.
- 3 to 4 press appearances
- Fermentation in new barrels
- Aged for a period of 20 months, always in barrels
