On the palate, the attack is ample, supported by elegant tannins and a beautiful structure. Producer

The Château Moulin Saint-Georges vineyard covers approximately 7 hectares on the southeast-facing slopes of Saint-Émilion, right next to Château Ausone. The clay-limestone soil gives the grapes a beautiful concentration and elegant minerality. The grape varieties, predominantly Merlot, benefit from optimal sunshine and sustainable farming practices, ensuring viticulture that respects the natural balance. The average age of the vines, over 25 years, allows for the production of highly ripe grapes, perfect for crafting dense, balanced wines built for aging.

Owner and history

Château Moulin Saint-Georges is owned by the Vauthier family, a distinguished name in the Bordeaux wine region. Managed by Pauline Vauthier, a passionate oenologist and rising star in Saint-Émilion, the estate benefits from the same level of attention and exacting standards as its prestigious neighbor, Château Ausone. Pauline embodies a modern and responsible vision of viticulture, combining technical innovation with respect for the terroir. Her aim: to express the elegance of Merlot and to bring out the best in each plot. Thanks to this commitment, Moulin Saint-Georges produces wines of refined style that rival the finest on the Right Bank.

Vinification and aging

The winemaking process is carried out with exemplary rigor by the Château Ausone team. Each plot is vinified separately, with gentle extractions to preserve the fruit. Fermentation takes place in temperature-controlled tanks, allowing for precise temperature management. The Château Moulin Saint-Georges 2024 vintage then benefits from 18 months of aging in French oak barrels, approximately 80% of which are new. This aging process imparts complexity, finesse, and great aging potential to the wine, without masking the expression of the terroir and the freshness of the fruit.
