Vinification and aging

The vinification of La Viallière 2021 is carried out with meticulous care. The Syrah grapes are harvested by hand, then destemmed before being placed in vats. Fermentation takes place in temperature-controlled tanks, allowing for precise temperature management. The wine is then aged for 12 months in oak barrels, some of which are new. This process imparts complexity and structure to the wine, while preserving the pure expression of the fruit and terroir.
