    This wine is an ideal accompaniment to refined dishes such as venison stew, beef fillet with truffle sauce, or mature cheeses. Serve between 16 and 18 °C after aeration for at least one hour.

    Owner and history

    This cuvée comes from a 1.75 hectare plot, located in the lieu-dit La Viallière, planted exclusively with Syrah. The vines, approximately fifteen years old, flourish on a unique terroir composed of schist and mica schist, giving the wine remarkable typicity and complexity.

    Vinification and aging

    The harvest is carried out entirely by hand, guaranteeing a precise and high-quality selection of the grape bunches. The grapes are then carefully destemmed to preserve the purity of the aromas and the finesse of the wine. Aging, lasting approximately 22 months, takes place in 70% new demi-muids, while the remaining 30% is in demi-muids that have already been used for one or two wines, thus creating a subtle balance between oak and fruit.
