    Owner and history

    The Premier Cru Aux Perdrix is ​​a near-monopoly of the estate. The vines, planted between 1922 and 1980, cover 3.45 hectares within the Nuits-Saint-Georges appellation. The vines are perfectly situated and benefit from clay-limestone soil.

    Vinification and aging

    - Hand-harvesting of the grapes
    - Alcoholic fermentation with indigenous yeasts
    - Maceration for 15 to 20 days in oak barrels (40% new)
    - Aged for 15 to 18 months (40% in new oak barrels)
