    Owner and history

    This cuvée is located on a 1.51-hectare plot south of the Beaune appellation. The Pinot Noir vines are around fifty years old and are propagated using massal selection. The terroir is certified organic and consists of clay-limestone soil, rich in iron oxide.

    Vinification and aging

    - Manual harvesting and sorting
    - Destemming and gravity-fed into stainless steel tanks
    - Gentle and long fermentation with indigenous yeasts
    - Aged in oak barrels (25% new), racked by gravity and unfiltered
